Agave Cultivation

  • Don Cayo selected the best agaves. Our plantations use descendants of that first selection, exclusive to this tequila.
  • Sustainable cultivation techniques maintain soil quality and health.

Jima

  • Expert workers cut the agave leaves leaving only the piña.
  • Labor of precision and experience.

Agave Cooking

  • Masonry ovens with firewood for slow and uniform cooking.
  • Cooking of 36 hours and rest of 12 hours.

Milling

  • Mill train with shredder and two mills for maximum extraction.

Fermentation

  • Wooden vats with agave fibers.
  • Natural environment that favors beneficial microorganisms.
